Waldecks Subiaco

Episode:#11 11/11/06
Presenter: Sue McDougall

The thought of a large rambling herb garden sounds wonderful, but in reality if it is too far from the house you tend not to use the herbs for cooking because it is too far to go when you are in the middle of preparing dinner.

If you have a courtyard or balcony and you are looking for some inspiration, head straight for the herb section at Waldecks Garden centres. It is where you will find some great plants that when put into pots in combinations will deliver all the culinary flavours you will need to add that little extra that will turn you into a culinary expert

When grouping the combinations together, go for flavours that blend with the style of cooking. That way you can snip all the leaves in the pot and throw them in to the dish you are cooking at the last minute. For Asian cooking plant coriander, garlic, lemongrass, chillies and chives.

One of Sue?s favourite dishes is lamb shanks and for flavouring the rich tomato sauces plant a pot containing basil, sage, rosemary, thyme, oregano and marjoram. Remember if a recipe calls for an herb you haven?t got, be adventurous and use a combination of others.
